Credo

At Credo Restaurant you will be served food cooked from ingredients grown in the Trøndelag region with a focus on flavours and sustainability. We are subordinate to the original flavour, and are always chasing the best flavours, the flavours that come right from a farm, a farmer or the soil, because at Credo it is the small differences that make quality ingredients. Credo wishes to take you through a multi-faceted experience of tastes, textures and emotions, which is done through a set tasting menu of 20-25 courses combined with drinks to enhance the flavours of each dish.

Fagn

The word Fagn refers to the welcome, food & lodgings given to travellers at rural farmhouses in days gone by, and the team want their guests to experience the same warmth in the intimate restaurant. They focus on local produce prepared and inspired by strong childhoodand personal culinary memories.

Speilsalen

Speilsalen (the ‘Mirror Hall’) is Britannia Hotel’s classic dining room, where your eyes dance over details from floor to ceiling. Today, the hall is home to Christopher Davidsen’s (Bocuse d’Argent 2017) first signature restaurant. Davidsen creates a culinary journey unlike any other, with a focus on perfecting the elements of surprise, using the finest handpicked Norwegian produce. The restaurant was awarded its first Michelin star in 2020, just 10 months after opening.

E.C. Dahls Pub og Kjøkken

E.C. Dahls Bryggeri has brewed beer in Trondheim since 1856. In the autumn of 2016, the brewery opened its doors to the public. The traditional Dahls Pils is brewed here alongside many new and innovative beers. When you visit the brewery, you can eat and drink well, participate in beer tastings and go on a guided tour of the brewery. If you want a tasty meal, you will experience lots of flavour at E.C. Dahls Pub & Kjøkken. Most of the ingredients are sourced from local producers.

Gubalari

Gubalari restaurant is located together with the art gallery K.U.K. an exciting art gallery for young artists. The menu is characterized by robust cooking with great flavours. The whole country’s TV chef Ingrid Espelid Hovig did not use the strongest words in her mouth, but she did have one, a power salve in line with the spice strength of her preferred herb, parsley. The power expression was “Gubalari”.

Brasseriet

The cornerstone of Britannia Hotel, this decoratively tiled restaurant is a high tempo drop-in eatery for everyone. Informal, alive with people and pulsating with great dishes. The Brasserie offers the perfect setting to indulge in quality food, with a wide range of beers on tap and wines by the glass. Comforting French classics accompanied by an ever-changing, seasonal menu, showing off the best Norwegian produce.

Le Bistro

French, informal and good! Enjoy food and drink inspired both by local ingredients and by French cuisine. Classic French dishes such as oysters, croquette and sparkling wine are served, along with buoyant dishes such as octopus paste and dessert with brown cheese. Run by married couple Mette Beate Evensen and Martin Hovdal since 2020, both trained sommelier and chef. Chef Mette is passionate about local quality ingredients and uses every opportunity to highlight Norwegian ingredients as this year’s farmers’ union chef 22-23. 

The Crab

We will bring the seafood from the islands to the city (Trondheim).  At Ansnes Brygger in the island of Hitra, the Gulf Stream coast creates the best conditions for shellfish and other seafood to thrive. The partnership between our kitchen and the Gulf Stream has made Ansnes Brygger a destination. The team at Ansnes Brygger were given the opportunity to offer local seafood and the culinary art of the islands to the people of Trondheim. Just like The Crab we will walk sideways, with sharp knives in our claws and Ansnes Brygger behind us. And we brought with us local seafood, game meat and local cheeses.

Troll

Troll is a 100 % Norwegian restaurant with an exotic twist. They serve Norwegian cuisine in a rebellious way. Their focus is on good local produce and the menu features dishes based on Norwegian culinary traditions. Visit them in an idyllic maritime setting on Fosenkaia in downtown Trondheim. Their outdoor seating is an amazing space for a summertime get together. 

To Rom & Kjøkken

Inspired by Mediterranean cuisine To Rom og Kjøkken prepares food in a fashion where quality ingredients are enhanced, while retaining their distinctive character. The menu follows the different seasons through the year, so that you are always eating fresh products at their best. To Rom og Kjøkken has close local partners who give us access to high quality agricultural products, seafood, game, mushrooms and berries.

Jossa Mat & Drikke

Jossa mat og drikke is located at Lilleby in Trondheim, and run by Founder Heidi Bjerkan. The restaurant serves food cooked from ingredients grown in the Trøndelag region, fish and mussels sourced from the waters surrounding it, and dairy products cultivated with a focus on flavours and sustainable practices. The most important elements at Jossa are the raw ingredients as well as highlighting the flavours of each produce when in peak season.
